Monday Dinner - Lemon Pepper Chicken, Bake Potato, and Broccoli

This is just about as classic of a meal as it gets!
I love this meal because it can easily be prepared way in advance making evenings simple and smooth!  (Which is great nowadays as Kinley chooses 5:00 as melt-down time....they don't call it the witching hour for nothing!)

Here are the ingredients for last night's meal

 (Please notice I'm starting with FROZEN chicken breasts!  It doesn't get much easier than that!)

First take lemon pepper seasoning and garlic powder and lightly coat both sides of the chicken breasts
  Then put 2 slivers of butter on each chicken breast (mine are all frozen together here, but it's actually 2 good sized pieces of chicken and 1 small one)

That's it!  Just pop this in the oven at 375 degrees for 45 minutes or until the juice from the chicken runs clear.  I always double check and make sure the insides aren't pink too!  Here's what it's like when fully cooked!

Sometimes I'll cook chicken this way for enchiladas or chicken pot pie.  It makes for some super yummy chicken!  You could also just do salt and pepper or really whatever seasonings you want!

Like I said, this is a very simple meal!  I baked 2 potatoes in foil at the same time and steamed up some broccoli.  Here's the final product
